
Paleo Protein Pancakes Recipe

Ingredients:
- 2 Whole Eggs
- 1/3 cup Liquid Egg Whites
- 1/3 cup Coconut Flour
- 1/4 tsp Baking Soda
- 3/4 cup water
- 1 TBSP Organic Honey
- Stevia (optional)
- Coconut Oil Spray (to lightly coat griddle)
Directions:
- Combine all ingredients in a small mixing bowl with a whisk. Note that coconut flour gives the batter a “mashed potato” like consistency. This can be adjusted for thinner pancakes with more water.
- Spray a non-stick griddle with coconut oil spray and set heat to medium. Once sprayed oil turns from white to transparent, the griddle is ready.
- Pour entire batter contents into a 2 cup measuring cup to carefully pour onto griddle. Batter should make ~6 pancakes that are roughly 5 inches in diameter. Once batter starts bubbling, gently flip with a plastic spatula.
- Makes 6 mini-pancakes :) Top with a drizzle of honey and a light spray of coconut oil. Serve with your favorite fruit for an extra touch of sweetness.
